Tadeas’ Blueberry Pancakes

Enjoy pancakes with a little something special. Simple ingredients paired with a pantry staple (pancake mix), make this recipe a go to for families and singles looking for delicious without the fuss. Add a little whipped cream to the recipe below, or infuse your raw honey with fresh blueberries if you want to elevate things just a touch. Enjoy!


  • Pancake mix (any kind)

  • Raw honey (see directions for specifics)

  • Oil (see directions for specifics)

  • Vanilla extract

  • 2-3 egg whites (optional)

  • 1 cup of fresh blueberries + more for plating

  • Fresh strawberries for topping

  • Few splashes of almond milk (optional)


  • Rinse fresh fruit.
  • Add 1 cup of blueberries to the blender and puree. Set the remaining fresh fruit and blended blueberries aside.
  • In large mixing bowl, prepare pancake mix according to the given directions.
  • Add raw honey and blueberry puree to the batter and combine. 1/2 – 1 tablespoon of honey per cup of batter. Adjust to your liking.
  • Add egg whites or almond milk if you’d like. Remember this is an optional step.
  • Add vanilla extract and mix.
  • Add cap-full or tablespoon of oil to skillet on medium heat.
  • Pour 1/4 cup scoops of batter into the skillet and brown pancakes on both sides. Repeat steps 7 and 8 until batter is gone.
  • Stack pancakes on a plate. Add fresh fruit of choice on plate and drizzle everything with raw honey on top and dig in.
