Strawberry Shortcake Crunch Unleavened Cake

This delicious bread is comprised of three parts, and worth the effort it takes to make it! Layers of different textures come together beautifully in an unleavened bread recipe you will make more than once for sure (LW). Also consider adding a thin layer of fresh strawberries to the batter for a little punch of something special. Enjoy!

Please note, using the butter cookie crumble for the topping does makes this recipe leavened. You can make your own cookies and remove the leaven to make the recipe completely unleavened.

Shortcake Crumbles Ingredients

  • 2 – 8 oz packages of butter cookies

  • 4 slices unsalted butter

  • 4 tablespoons of ice water

  • 5 drops of red food coloring

Shortcake Crumbles Directions

  • To create the pink crumbles, use 1 – 8 oz pack of butter cookies, 2 tablespoons of unsalted butter, 2 tablespoons of ice water, and food coloring.
  • Add ingredients into a food processor and pulse until crumbles are medium size.
  • Preheat oven at 350 degrees. Add crumbles to a baking sheet and bake for 10-15 minutes to dried crumbles out a bit.
  • Repeat steps one through three, being sure NOT to add food coloring to the second set of crumbles.
  • Once both crumbles are complete and cooled completely, combine and set aside.

Whipped Cream Cheese Frosting Ingredients

  • 1/2 cup softened butter

  • 8 oz cream cheese, softened

  • 1/2 cup whipping cream

  • 1 tablespoon vanilla extract

  • 1/2 – 2 cups of confectioners sugar to your liking

Whipped Cream Cheese Frosting Directions

  • Add 1/2 cup of softened butter, and 8 oz of cream cheese into a mixing bowl. Mix until well incorporated.
  • Add in 1/2 cup of whipping cream, and 1 tbsp of vanilla. Mix until well combined.
  • Add confectioners sugar to liking. Try 1/2 cup to 2 cups
  • Refrigerate until ready to top.

Cake batter Ingredients

  • 3 cups flour

  • 3 cups of sugar

  • 3 sticks of softened butter

  • 1 cup of milk

  • 1/3 cup of applesauce

  • 5 eggs

  • Red dye

  • Strawberry extract

Directions

  • Combine sugar and butter and mix completely. Set aside.
  • Add flour and slowly add the following wet ingredients, including the sugar and butter mixture, milk, and applesauce.
  • Add eggs one at a time until completely incorporated.
  • Take the batter and split into two equally parts.
  • Take one part of the batter and add a few drops of the dye until you achieve a pink color. Also add 2-3 teaspoons of strawberry extract to taste.
  • Oil pan and preheat oven to 325 degrees.
  • Add a layer of the pink batter to the bottom of the pan.
  • Add a plain layer of bottom on top.
  • Bake for 40 minutes and remove to cool.
  • Add a thin layer of frosting (recipe above) and crumbles (recipe above). Enjoy!
