Spring Steak Salad

Turn leftover steak into the perfect spring lunch with this delicious salad recipe!  The warm skirt steak pairs beautifully with ripe tomatoes and is topped with zesty feta cheese for a flavorful and light meal.   Make for yourself, family, or a gathering!

Ingredients

  • Kale

  • Arugula

  • Romaine

  • Tomato

  • Grilled flank steak

  • White onion, sliced

  • Boiled egg, sliced

  • Feta cheese

  • Cracked black pepper

Directions

  • Cut steak into bit sized strips and set aside.
  • Mix even amounts of kale, arugula, and romaine into a bowl.
  • Cut tomato into quarters and slice into half inch slices and add to the bowl.
  • Cut white onion in half and cut into slices and add to bowl.
  • Cut hard boiled egg into slices (1 egg per serving) and add to the bowl.
  • Top with feta cheese and nice amount of cracked black pepper to your desired liking.
  • Enjoy with your favorite dressing.

Try this delicious dressing.  It is a favorite in my lord’s home.  Even our five year old loves it!
