Mowriyah Amita’s Vegan Mac N Cheese

This macaroni and cheese recipe is completely vegan, and every bit as satisfying as traditional mac, without the guilt. Healthy Judah indeed! Pair with braised greens, and sweet potatoes for a completely vegan meal. Enjoy!


  • 1 box of elbow noodles

  • 12 tablespoons nutritional yeast

  • 8 – 10 tablespoons tapioca flour

  • 4 cups of nut milk (almond, cashew, coconut etc.)

  • 1/2 stick vegan butter

  • Smoked paprika (to taste)

  • Garlic powder (to taste)

  • Onion powder (to taste)

  • Salt and Pepper (to taste)


  • Cook box of elbow noodles until al dente.
  • Strain water and stir in butter. Set aside and move on to the next step to make cheese sauce.
  • To make cheese sauce, pour milk into a sauce pan and add Nutritional Yeast, Tapioca Flour, and all dry seasonings mentioned. 
  • Cook on low to med heat, consistently stirring until mixture thickens. (This is your cheese sauce, and guess what??? You can use this cheese sauce for other dishes that call for cheese sauces i.e., nachos, cheese dips etc.
  • Pour cheese sauce into pan with noodles and stir to combine.
  • Add additional seasoning to desired taste.
  • Cover the pan with foil and bake in a 425 degree oven for 30 minutes.
  • Remove from the oven and serve!
