Mint Chocolate Chip Unleavened Bread

My eldest son loves mint chocolate chip anything!! Cookies, ice cream, moose, it doesn’t matter. He is who I had in mind when I made this bread APTTMH! Our children are our our heritage, and when I serve them well, I serve their father well. The mint, chocolate “thing” deepened in my lord’s house, as my love (lord/husband) recently found a mint chocolate ice cream he’s been raving about. So I had my big love, and one of my little loves jones’n, and there was no way I wasn’t hitting the drawing board. What can I say, I love making my mens happy!! Especially the lord/hubby/daddy man lol. Remember y’all….#levels.

The following recipe is simple but so satisfying!! The whipped topping is my favorite part of the cake. The combination of the moist chocolate cake, filled with chips of dark chocolaty goodness, and the smooth and cool minty topping, make me know i’m doing something right! Cake Ingredients

  • 2/3 cup of milk

  • 4 eggs

  • 2 cups of flour

  • 2 sticks of butter

  • 2 cups of sugar

  • 2 tablespoon vanilla extract

  • 1 – 1.5 cups dark chocolate chips

  • 1 tablespoon mint extract (use peppermint as a substitute)

  • 4 tablespoons cocoa powder

Cake Directions

  • Add butter and sugar, and mix in a mixer for 3-5 minutes.
  • Add half of the flour and half of milk and blend until incorporated. Add the remaining half of both next and blend until smooth.
  • Add both extracts (vanilla and mint).
  • Be sure to taste. You want to taste prior to raw egg being added. Adjust extracts to your taste if necessary.
  • Once all flavors are blended, add egg and blend completely
  • Now gently fold in chocolate chips and fold in until completely blended.
  • Pour batter into a greased 9 x 16 pan.
  • Bake on 350 degrees for 50 minutes to 1 hour. Be sure to check at 50 minutes with a toothpick. If done, remove. If the toothpick doesn’t come out clean, leave in for another 10 minutes.
  • Remove from oven and allow to cool completely.
  • Top with whipped cream topping. The recipe can be found below.
  • Dust the top with cocoa powder and enjoy!

Mint chocolate chip whipped cream Ingredients

  • 2 cups heavy cream

  • 1/4 cup white sugar

  • 1 teaspoon vanilla extract

  • 2 teaspoons mint extract

  • 2-3 drops green food coloring

  • 1 tablespoon cocoa powder for dusting

Directions

  • Whip cream in a mixer on high, slowly adding sugar, mint and vanilla extract until a nice fluffy mixture results. Once you have a stiff cream, shut off the mixer.
