JuJu’s Fried Green Tomatoes

Saying my lord loves fried green tomatoes is an understatement! I completely understand since I enjoy them just as much. These discs of flavor are perfect on their own, or paired with a Cajun/Creole themed meal. Add a slammin’ sauce and you are in there! Enjoy!

Ingredients

  • 3 large green tomatoes, sliced 1/2 inch thick

  • 1 teaspoon baking powder

  • 1 cup yellow corn meal

  • 4 tablespoons flour

  • 1 tablespoon dried parsley flakes

  • Garlic powder

  • Onion powder

  • Lemon pepper

  • Paprika

  • 1 tablespoon Himalayan salt

  • 2 eggs, beaten

  • Avocado oil

Directions

  • Combine cornmeal, flour, baking powder, salt and dried parsley in rectangle/square dish.
  • In a separate dish place tomatoes and season liberally with garlic powder, onion powder, lemon pepper, and paprika.
  • Pour beaten egg over tomatoes and coat well. Sprinkle with a little salt after tomatoes are well coated. Set aside.
  • Take cornmeal mixture and season liberally with garlic powder, onion powder, lemon pepper and paprika. Start with a tablespoon of each and taste the mixture to see if you need to add anything. Your tasting for a balance of flavor. The mixture will not taste done or prepared in any way at this stage. Be sure to add salt if necessary.
  • Heat a thin layer of avocado oil in a large skillet over medium-high heat.
  • Take tomato from egg mixture and allow excess to drip off. Add tomato to seasoned cornmeal mixture, being sure the entire tomato is nicely coated.
  • Add tomato to hot oil and fry on each side approximately 1 minute each. Be sure not to overcook to avoid mushy texture. You’re looking for a nice golden brown color.
  • Remove tomato once golden brown and place on a plate lined with paper towel, allowing excess oil to drain. If you happen to have a wire rack, you can use this to drain your tomatoes. Just be sure there is something underneath to catch the oil.
  • Cook the tomatoes in batches, being certain not to overcrowd the pan. A good rule of thumb is to leave at least an inch on all sides of each piece of food you have in the pan. It will prevent steaming, resulting in mushy food.
  • Taste the first tomato that is done. If it is already nicely salted you are good to go. If it can use a bit more salt, be sure to add a nice sprinkle of salt to each tomato as soon as it comes out of the oil. Enjoy!
