Issachar Street Corn Salad

This salad is simple but full of flavor! Creamy and delicious, you can add this dish as a side, wrap filler, or salad topper. The recipe below serves 8 – 10 people. Cut the recipe in half for your family of four for a week night meal you all are sure to enjoy.


  • 8 ears of corn

  • 1 red onion, diced fine

  • 2 cups cilantro, chopped fine

  • 1 jalapeno, seeds removed and diced fine

  • Juice of 1 lime

  • 4 heavy tablespoons mayonnaise

  • 5 tablespoons Cojita

  • 3 tablespoons grated Parmesan

  • 2 heavy tablespoon sour cream

  • 1 teaspoon black pepper

  • 1 teaspoon cumin

  • 1 teaspoon chili powder

  • 2 tablespoons Badia Sazon Tropical (green)

  • 1 teaspoon garlic powder

  • 1 sprig green onion, chopped

  • 1 teaspoon Badia Sazon Tropical (orange)


  • Grill corn over charcoal, roasting until charred on all sides and tender. If unable to grill outdoors, broil the corn in the oven on high, being sure to turn corn to get char marks on all sides.
  • Cut corn from cob and add to a large bowl.
  • Add all remaining ingredients EXCEPT green onion and Badia Sazon Tropical (orange) and combine thoroughly.
  • Top the salad with green onions and even dusting of Badia Sazon Tropical (orange).
  • Serve immediately or refrigerate for later serving.
