Egg Roll-ups

These bad boys are the perfect for the Sabbath, brunch, or a meal on the go throughout the week. I prepare a large batch for my family, and freeze a portion to be enjoyed later. This hand-held meal is versatile and can be made of any filling ingredients desired. I’ve provided the recipes for the versions pictured: Pesto Vegetable and Southwest Egg Roll-ups.

General Ingredients

  • Large tortilla shells (1 for each roll-up you plan to make)

  • Eggs (1 for each roll-up you plan to make)

  • Avocado oil

  • Salt

  • Pepper

  • Dried parsley

Pesto + Vegetable Egg Roll-up Ingredients

  • Grilled zucchini

  • Grilled red peppers

  • Grilled onions

  • Kale

  • Classico Pesto spread

  • Mozzarella cheese

  • Grated Parmesan cheese

SouthWest egg roll-up Ingredients

  • Ground turkey seasoned with taco seasoning

  • Black beans

  • Grilled onions, diced

  • Grilled peppers (red, orange, yellow), diced

  • Mexican four cheese blend

  • Tomatoes, diced

  • Kale

  • Avocado, mashed


  • Crack eggs and beat in a bowl until yolks are blended.
  • Season eggs with salt, pepper and parsley.
  • Heat skillet over medium heat and add oil. Add enough oil to coat the bottom of the entire pan.
  • Once hot, pour a thin layer of egg to cover the bottom of the entire pan.
  • Immediately add filling ingredients, being sure to add the cheese last. Don’t add too much of the ingredients. You will need to flip and don’t want it too heavy.
  • Add tortilla directly on top. If making the Pesto Vegetable version, spread the pesto spread on one side of the tortilla, being sure to leave at least an 1 inch border. It is important not to spread the pesto to the border of the tortilla. If making the Southwest version, spread the mashed avocado/guacamole in the same fashion.
  • Cook until bottom of the egg has a light brown color, and is firm.
  • Using a spatula, flip the egg and tortilla over. Fry/toast tortilla until light brown.
  • Remove and let cool for a minute or two.
  • Roll-up with the egg and ingredients in the middle.
  • Cut down the middle and enjoy!
