Cajun Salmon with Fried Green Tomatoes

This salmon dish is a departure from the normal, with familiar elements that bring a taste of the bayou to your table. My lord loves fried green tomatoes, and salmon is a staple in our home. This dish brings them together in perfect harmony. Serve over mash potatoes or rice and top with a Roasted Garlic + Red Pepper sauce for burst of flavor perfect for any night of the week. Salmon Ingredients

  • 4 salmon fillets, skin removed (marinated in green seasoning)

  • 4 – 5 tablespoons of Tony Chachere’s Original Creole Seasoning

  • 1 tablespoon of Garlic powder

  • 1 tablespoon of Onion powder

  • 1 tablespoon of Paprika

  • 1 teaspoon – 1 tablespoon of Cayenne (optional depending on how spicy you like your salmon)

  • 2 tablespoons lemon juice

  • 1 tablespoon avocado oil


  • Add lemon juice and oil to a bowl, place salmon in the mixture, and coat all over. Remove and line fillets on a flat surface (plate or cutting board) lined with parchment paper.
  • Liberally season each side of fish with Tony’s creole seasoning. Roughly 1-1.25 tablespoons of seasoning per fillet. You want the seasoning to be visibly coating the fish’s surface.
  • Combine remaining ingredients to form a dry rub, and season all four sides of the fish with the mixture.
  • Add a thin layer of avocado oil to a large skillet. You can also use your favorite cooking spray.
  • Sear all sides of the fish. Roughly 3-4 minutes per side. The sides of the fish will only need to be seared 1 or so minutes each. Fish is done when it is firm to the touch.
  • Remove salmon from the pan and set aside.
  • Grab the fried green tomatoes you prepared and place onto a plate either alone, or on top of potatoes or rice.
  • Top the tomato with a fillet of salmon.
  • Drizzle with Roasted Red Pepper + Garlic sauce (recipe below).
  • Sprinkle the top with dried parsley to finish and enjoy!

Roasted Red Pepper + Garlic Sauce Ingredients

  • 1/4 cup roasted red peppers, homemade or jarred

  • 1 bulb roasted garlic, homemade or jarred (1.5 tablespoons)

  • 1/2 cup mayonnaise

  • 1/2 cup Sour cream

  • 1 tablespoon of Siracha

  • Juice of 1/2 lemon (add a little more if necessary)

  • 1 tablespoon fresh dill

  • 1 teaspoon fresh parsley


  • Add all ingredients to a blender and blend until smooth.
  • Taste mixture and add additional lemon juice and salt as needed.
  • Refrigerate for 30 minutes before serving.
